SPF records and smart hosts

Seeing as how my attempts to configure SBS 2011 std with EOA failed catastrophically thanks to some rather poorly hidden information It's now been necessary for me  to move to a fully hosted solution.

 

Clients email is currently routed through a spam filtering service, I'm assuming it's possible to just create the receive connector on FOPE to allow email in and then disable further filtering.

 

Also, I'm assuming that this means I will not need to create the MX record.

 

Client has an SPF record for their current mail server. when I migrate them across to the EO solution I will need to change the spf record from it's current ip4:xxx.xxx.xxx.xxx to a:? what should the entry be?
